I'd be lying if I said I didn't carve a pumpkin just so I could roast some seeds.. I am not the best pumpkin carver so it's a stressful situation to get into, but so worth it in the end! Made the seeds three different ways:
1. Tossed with olive oil and lightly salted
2. Tossed with garlic olive oil and lemon pepper
3. Tossed with melted butter and sprinkled with cinnamon and sugar on top
